Peanut Butter Fudge

1/2 cup peanut butter

1/3 cup coconut oil

1/4 cup honey*

optional extras

1/2 teaspoon concentrated natural vanilla extract

pinch of salt

Place the ingredients into a medium sized heat proof bowl.

Gently melt the ingredients. You can do this in a microwave or on the stove over a saucepan of simmering water. Either way, but be sure you do not over heat it.

Once lightly melted mix the ingredients until the mixture is smooth.

Pour the mixture into a silicon loaf tin.

Place in the freezer to set.

Remove from the freezer and leave to stand at room temperature for a minute or two prior to cutting.

You can store this in either the fridge or freezer. It is very fudgey when kept in the fridge. However, my preference is to eat it straight from the freezer. Be sure to try it that way. I would love to know which one you prefer.

*you can use rice malt syrup if you prefer
